Yorkshire Parkin

The Pantry

  • 225g plain flour
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 110g margarine
  • 215g oatmeal
  • 10g porridge oats
  • 2 tbsp golden syrup
  • 225g sugar
  • 240ml milk

A Proper Bake

1. The Rub: Mix flour and margarine. Add baking powder and ginger.

2. The Mix: Add oats, sugar, and salt.

3. The Sweetness: Stir in syrup, then milk.

4. The Bake: Bake at 160°C for 50–60 minutes.

5. The Best Bit: Once baked, allow to cool slightly and enjoy warm or cold — optionally serve with hot or cold custard for extra comfort.

A Recipe from the Heart

This recipe has been passed down through my family — from my great grandmother, to my nan, and now to me. I would love for others to try it and enjoy this cake as much as we do, as it carries so many memories of home and togetherness.
